small Yellow Onion

Fresh Parsley or Cilantro, finely chopped (

Ground Coriander
1 tsp
Smoked Paprika
1/2 tsp
Salt (or to taste)
1/2 tsp
Black Pepper
1/4 tsp
Cinnamon (optional)
1/4 tsp
Baking Soda (helps tenderize the meat)
1 tbsp
Olive Oil (15ml) – for brushing
Wooden Skewers – soaked in water for 30 minutes (or cut to fit your basket)

Instructions
Mix: Combine beef, squeezed onion, garlic, herbs, and spices in a bowl. Knead for 3 minutes.
Chill: Refrigerate the mix for 20 minutes to help it hold its shape.
Preheat: Set air fryer to 380°F (195°C).
Shape: Form the meat around skewers into 4-inch logs. Brush with oil.
Cook: Air fry for 8 minutes, flip, then cook for 3-4 more minutes until browned.
Serve: Let rest for 2 minutes and enjoy.
