Crispy Coconut Shrimp Air Fryer

Ingredients

• 1 pound raw large shrimp

• 1 cup coconut flour

• 1 teaspoon sugar

• 2 teaspoon red pepper flakes, optional

• 1 cup unsweetened coconut flakes

• 2 large eggs, whisked

• ¼ cup Sweet n sour sauce

• ½ teaspoon garlic powder

• salt and freshly ground black pepper to taste

Instructions

  1. Prep Your Station: First, get your three shallow bowls ready. In the first bowl, mix the coconut flour, sugar, garlic powder, salt, pepper, and red pepper flakes (if you’re using them). In the second bowl, whisk the two eggs until they are smooth. In the third bowl, put your unsweetened coconut flakes.
  2. Dry the Shrimp: Take your shrimp and pat them completely dry with a paper towel. This is an important step because it helps the coating stick really well. Make sure you leave the tails on so they are easy to hold and dip later!
  3. Coat the Shrimp: Now for the fun part! Take one shrimp at a time. First, dip it into the flour mixture and cover it all over. Shake off any extra flour. Next, dip it into the whisked eggs, letting any extra egg drip off. Finally, press it into the coconut flakes, making sure it’s completely coated. Set the coated shrimp on a clean plate. Do this for all of your shrimp.
  4. Heat the Air Fryer: Turn on your air fryer to 400°F (200°C). Let it heat up for about 3-5 minutes. Preheating helps make the shrimp extra crispy.
  5. Cook the Shrimp: Lightly spray the air fryer basket with cooking spray so the shrimp don’t stick. Carefully place the shrimp in a single layer in the basket. Make sure they are not touching or overlapping. You might have to cook them in two batches.
  6. Air Fry: Cook the shrimp for 8-10 minutes. Halfway through cooking (at about the 4 or 5-minute mark), use your tongs to carefully flip each shrimp over. This helps them get golden and crispy on both sides.

Serve and Enjoy: Once the shrimp are golden brown and crispy, take them out of the air fryer. Serve them right away with your favorite sweet and sour sauce for dipping. Enjoy your delicious homemade snack!
