Air Fryer Stuffed Peppers

Ingredients

  • 6 medium bell peppers
  • 1 cup cooked quinoa
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  • Preheat the air fryer to 375°F (190°C).
  • Cut the tops off the bell peppers and remove the seeds.
  • In a bowl, mix the cooked quinoa, black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper.
  • Stuff each bell pepper with the quinoa mixture, pressing down gently to pack it in.
  • If using, sprinkle shredded cheese on top of each stuffed pepper.
  • Place the stuffed peppers in the air fryer basket and cook for 10-12 minutes, or until the peppers are tender and the cheese is melted.
  • Remove from the air fryer and let cool for a few minutes before serving.
