black beans, drained and rinsed

corn, frozen or canned
1 cup
diced tomatoes
1 teaspoon
cumin
1 teaspoon
chili powder
Salt and pepper to taste

Instructions
Preheat the air fryer to 375°F (190°C).
Cut the tops off the bell peppers and remove the seeds.
In a bowl, mix the cooked quinoa, black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper.
Stuff each bell pepper with the quinoa mixture, pressing down gently to pack it in.
If using, sprinkle shredded cheese on top of each stuffed pepper.
Place the stuffed peppers in the air fryer basket and cook for 10-12 minutes, or until the peppers are tender and the cheese is melted.
Remove from the air fryer and let cool for a few minutes before serving.
