Instructions
Boil: Boil baby potatoes in salted water for 15-20 minutes until fork-tender. Drain and let them steam dry.
Smash: Gently flatten each potato to about a 1/2-inch thickness using the bottom of a glass.
Season: In a bowl, gently toss the smashed potatoes with olive oil, garlic powder, salt, and pepper.
Air Fry: Preheat the air fryer to 400°F (200°C). Cook in a single layer for 15-20 minutes, flipping halfway, until golden brown and crispy.
Serve: Garnish with fresh parsley and serve hot.
