2 boneless, skinless chicken breasts (6–8 oz each), cut into 1-inch cubes
1/4 cup all-purpose flour
1 tsp Kosher salt

For the Sesame Sauce:
1/4 cup soy sauce
1/4 cup rice wine vinegar
1/2 cup packed light brown sugar
1/3 cup water
1 tbsp cornstarch
1 tbsp sesame oil
1/4 cup sesame seeds
Instructions
Make the Sauce: In a saucepan, whisk together soy sauce, rice vinegar, brown sugar, water, and cornstarch until smooth. Stir in the sesame oil. Bring the mixture to a bubble over medium-high heat, then reduce heat and simmer for 8-10 minutes until it thickens.
Coat the Chicken: In a bowl, combine the flour, salt, and pepper. Add the cubed chicken and toss until every piece is evenly coated.
Air Fry the Chicken: Preheat your air fryer to 400°F (200°C). Arrange the coated chicken in a single layer in the air fryer basket (cook in batches if needed). Air fry for 13-15 minutes, flipping halfway through, until the chicken is golden brown and cooked through.
Combine and Serve: Transfer the hot, crispy chicken to a large bowl. Pour the warm sesame sauce over the top, add the sesame seeds, and toss everything together to coat. Serve immediately.
