Preheat: Preheat the air fryer to 400°F (200°C).
Prep & Bread: Cut chicken into 1-inch pieces. Set up three bowls: (1) flour and spices, (2) egg and milk, (3) Panko. Coat chicken first in flour, then egg, then Panko.
Cook: Spray the air fryer basket and chicken with cooking spray. Cook in a single layer for 10-12 minutes, flipping halfway through.
Serve: Remove when the chicken is golden brown, crispy, and cooked to 165°F (74°C). Serve immediately.
