Air fryer Hasselback potatoes

Ingredients

  • 4 medium Russet or Yukon Gold potatoes (about 8 oz / 225g each)
  • 1 tbsp Extra-virgin olive oil (15ml)
  • 1 tbsp Unsalted butter, melted (14g)
  • 1/2 tsp Garlic powder
  • 1/2 tsp Kosher salt
  • 1/4 tsp Black pepper, freshly ground
  • 1 tbsp Fresh parsley or chives, chopped for garnish (optional)

Instructions

  1. Preheat & Prep: Preheat the air fryer to 375°F (190°C). Wash, dry, and slice the potatoes using chopsticks as a guide to avoid cutting all the way through.
  2. Season: Mix melted butter, olive oil, and seasonings. Brush all over the potatoes, getting in between the slices.
  3. Cook: Air fry for 15 minutes.
  4. Baste & Finish: Brush with remaining butter mixture and cook for another 10-15 minutes until golden, crispy, and tender inside.
  5. Serve: Garnish with fresh herbs and serve hot.
