4 medium Russet or Yukon Gold potatoes (about 8 oz / 225g each)
1 tbsp Extra-virgin olive oil (15ml)
1 tbsp Unsalted butter, melted (14g)
1/2 tsp Garlic powder
1/2 tsp Kosher salt
1/4 tsp Black pepper, freshly ground
1 tbsp Fresh parsley or chives, chopped for garnish (optional)
Instructions
Preheat & Prep: Preheat the air fryer to 375°F (190°C). Wash, dry, and slice the potatoes using chopsticks as a guide to avoid cutting all the way through.
Season: Mix melted butter, olive oil, and seasonings. Brush all over the potatoes, getting in between the slices.
Cook: Air fry for 15 minutes.
Baste & Finish: Brush with remaining butter mixture and cook for another 10-15 minutes until golden, crispy, and tender inside.
