2 large Catfish Fillets (about 6 oz / 170g each), fresh or thawed
1/2 cup Yellow Cornmeal (60g)
1/4 cup All-Purpose Flour (30g)
1 1/2 tbsp Cajun Seasoning (or your favorite blend)
1 large Egg
2 tbsp Milk (30ml) (any kind works)
Olive oil or avocado oil cooking spray
Optional: Lemon wedges and hot sauce for serving
Instructions
Preheat: Preheat the air fryer to 400°F (200°C).
Prep: Pat catfish fillets completely dry.
Breading Station: In one shallow dish, whisk 1 egg and 2 tbsp milk. In a second dish, whisk 1/2 cup cornmeal, 1/4 cup flour, and 1 1/2 tbsp Cajun seasoning.
Coat: Dip fish in the egg mixture, then press firmly into the cornmeal mixture to coat all sides.
Cook: Place fish in a single layer in the air fryer basket (do not overcrowd). Spray the tops generously with oil.
Fry: Air fry for 10-12 minutes, carefully flipping halfway. Spray the other side with oil after flipping. Cook until golden brown, crispy, and fish flakes easily. Serve immediately.
