Making these burritos is so simple! Just follow these steps, and you’ll have a perfect breakfast ready in no time.
1. Cook the Filling:
If you haven’t already, cook your diced potatoes or tater tots according to the package directions. A quick spin in the air fryer works great for this! Set them aside.
In a large skillet over medium-high heat, cook the breakfast sausage, breaking it apart with a spoon, until it’s browned and cooked through. This usually takes about 5-7 minutes. Drain any excess grease from the pan and set the cooked sausage aside in a large bowl with the potatoes.
2. Scramble the Eggs:
In a medium bowl, whisk together the eggs, milk, salt, and pepper until they are light and frothy.
Using the same skillet, reduce the heat to medium-low. Pour in the egg mixture and cook, stirring gently with a spatula, until the eggs are soft and fluffy. This should take about 2-3 minutes. Be careful not to overcook them, as they will cook a little more inside the burrito.
3. Assemble the Burritos:
Add the cooked eggs to the large bowl with the sausage and potatoes. Add the shredded cheese and gently stir everything together until it’s well combined.
Slightly warm your tortillas in the microwave for 15-20 seconds to make them soft and pliable. Lay one tortilla flat and spoon about 1/8th of the filling (a generous heaping cup) into the center.
Fold the burrito tightly. Fold the left and right sides in over the filling, then take the bottom edge (the one closest to you) and pull it up and over the filling, tucking it in tightly. Continue rolling it into a snug burrito. Repeat with the remaining tortillas and filling.
4. Air Fry to Perfection:
Preheat your air fryer to 380°F (190°C).
Lightly spray the assembled burritos with cooking spray or brush them with a little olive oil. This is the secret to getting them extra crispy!
Place 2-3 burritos in the air fryer basket in a single layer, seam-side down. Don’t overcrowd the basket.
Air fry for 6-8 minutes, flipping them over halfway through, until the tortillas are golden brown and crispy.
