  • 2 medium Overripe Bananas, mashed well
  • 1 cup All-Purpose Flour (120g)
  • 1/4 cup Unsalted Butter (57g), melted and cooled
  • 1/4 cup Light Brown Sugar, packed (50g)
  • 1/4 cup Granulated Sugar (50g)
  • 1 large Egg, lightly beaten
  • 1 tsp Vanilla Extract
  • 1/2 tsp Baking Soda
  • 1/4 tsp Salt
  • 1/2 cup Chopped Walnuts, Pecans, or Chocolate Chips (Optional)
  • Cooking spray or butter for the pan

Instructions

  1. Preheat & Prep: Preheat the air fryer to 320°F (160°C). Grease a mini loaf pan.
  2. Mix: In a large bowl, whisk together mashed bananas, melted butter, sugars, egg, and vanilla. In a small bowl, whisk flour, baking soda, and salt.
  3. Combine: Gently fold the dry ingredients into the wet ingredients until just combined. Stir in any mix-ins.
  4. Cook: Pour batter into the pan. Air fry for 20-25 minutes, or until a toothpick comes out clean. Cover with foil halfway through if the top browns too fast.
  5. Cool: Let it rest in the pan for 10 minutes, then transfer to a wire rack to cool completely.
