  • 2 cups Mixed Dried Fruit (300g)
  • 1/2 cup Orange Juice or Brandy (120ml)
  • 1/2 cup Unsalted Butter, softened (113g)
  • 1/2 cup Brown Sugar, packed (100g)
  • 2 large Eggs, room temperature
  • 1 cup All-Purpose Flour (125g)
  • 1/2 tsp Baking Powder
  • 1 tsp Ground Cinnamon
  • 1/2 tsp Ground Ginger
  • 1/4 tsp Salt
  • 1/2 cup Chopped Walnuts or Pecans (Optional mix-in)
  • Cooking spray or butter for greasing the pan

Instructions

  1. Preheat: Set air fryer to 300°F (150°C).
  2. Mix: Cream butter and sugar, add eggs, then stir in dry ingredients.
  3. Fold: Mix in soaked fruit and nuts.
  4. Pour: Put batter into a greased 6-inch pan.
  5. Cook: Air fry for 50-60 minutes until a toothpick comes out clean.
  6. Cool: Let it rest for 10 minutes before removing from the pan.
