Ingredients

  • 2 cups Broccoli florets (approx. 150g), cut into bite-sized pieces
  • 1 medium Bell pepper (approx. 150g), any color, deseeded and cut into 1-inch chunks
  • 2 medium Carrots (approx. 120g), peeled and sliced into 1/4-inch rounds
  • 1 medium Zucchini (approx. 200g), cut into half-moons
  • 1 ½ tbsp Extra-virgin olive oil (22ml)
  • ½ tsp Garlic powder
  • ½ tsp Onion powder
  • ½ tsp Dried oregano
  • ½ tsp Kosher salt
  • ¼ tsp Black pepper
  • Optional: A squeeze of fresh lemon juice or a sprinkle of Parmesan cheese for serving.

Instructions

  1. Preheat: Set the air fryer to 380°F (193°C).
  2. Prep: Wash, dry, and chop the veggies into 1-inch pieces.
  3. Toss: Coat the veggies in a bowl with oil and all the seasonings.
  4. Cook: Air fry for 12-15 minutes, shaking the basket every 5 minutes.
  5. Finish: Remove once edges are golden brown and crispy. Serve immediately.
