Instructions
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
Add the cold, cubed butter to the flour mixture and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
In a separate bowl, whisk together the milk, egg, and vanilla extract.
Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the dried fruit.
Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together.
Pat the dough into a circle about 1 inch thick and cut it into 6 wedges.
Preheat the air fryer to 320°F (160°C).
Place the scones in the air fryer basket, making sure they are not touching.
Air fry for 10-12 minutes or until golden brown and cooked through.
