  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup dried fruit (e.g., raisins or cranberries)

Instructions

  • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  • Add the cold, cubed butter to the flour mixture and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
  • In a separate bowl, whisk together the milk, egg, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the dried fruit.
  • Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together.
  • Pat the dough into a circle about 1 inch thick and cut it into 6 wedges.
  • Preheat the air fryer to 320°F (160°C).
  • Place the scones in the air fryer basket, making sure they are not touching.
  • Air fry for 10-12 minutes or until golden brown and cooked through.
