Air Fryer Fluffy Pancakes

Ingredients

  • 1 cup All-Purpose Flour (125g)
  • 2 tbsp Granulated Sugar (25g)
  • 2 tsp Baking Powder
  • 1/2 tsp Kosher Salt
  • 1 large Egg, room temperature
  • 3/4 cup Milk (180ml) (any kind works, buttermilk is great too!)
  • 2 tbsp Unsalted Butter, melted (28g) (or neutral oil)
  • 1 tsp Vanilla Extract
  • Cooking spray or extra butter for greasing molds
  • Equipment: Silicone muffin liners, egg bite molds, or small 3-4 inch ramekins are essential for this recipe.

Instructions

  1. Preheat: Preheat the air fryer to 350°F (175°C).
  2. Mix Batter: In one bowl, whisk flour, sugar, baking powder, and salt. In another, whisk egg, milk, melted butter, and vanilla. Pour the wet into the dry and gently mix until just combined.
  3. Fill Molds: Grease silicone molds and fill them halfway to two-thirds full with batter.
  4. Cook: Place molds in the air fryer basket and cook for 8-10 minutes, or until golden and a toothpick comes out clean.
  5. Serve: Carefully remove, let cool for a minute, and serve warm with your favorite toppings.
