The Ultimate Quick Air Fryer Christmas Pudding

  • 1 ½ cups Mixed Dried Fruit (approx. 225g)
  • 1 cup Fresh Breadcrumbs (approx. 60g)
  • ½ cup Self-Raising Flour (approx. 65g)
  • ½ cup Dark Brown Sugar (packed, approx. 100g)
  • ½ cup Butter (113g), cold and grated or very finely diced
  • 1 large Egg, room temperature and lightly beaten
  • ¼ cup Orange Juice (60ml) or brandy
  • 1 tsp Ground Cinnamon
  • ½ tsp Ground Nutmeg
  • ½ tsp Ground Ginger
  • Zest of 1 Orange
  • Cooking spray or butter for greasing your pudding basin

Instructions

  1. Prep: Grease a small heat-proof bowl (pudding basin).
  2. Mix: Combine dried fruit, breadcrumbs, flour, sugar, spices, butter, egg, and juice in a large bowl.
  3. Fill: Press the mixture into the prepared basin and cover tightly with foil.
  4. Air Fry: Cook at 320°F (160°C) for 45-50 minutes.
  5. Check: Ensure a toothpick comes out clean from the center.
  6. Serve: Let rest for 10 minutes, flip onto a plate, and enjoy!
