The Easiest Air Fryer Christmas Cake

Ingredients

  • 2 cups Mixed Dried Fruit (300g)
  • 1/4 cup Orange Juice or Brandy (60ml) (Plus a little extra for soaking)
  • 1/2 cup Unsalted Butter, softened (115g)
  • 1/2 cup Dark Brown Sugar (100g)
  • 2 large Eggs, room temperature
  • 1 cup All-Purpose Flour (125g) (You can use gluten-free flour if needed)
  • 1 tsp Mixed Spice (Or a mix of cinnamon and nutmeg)
  • 1/4 tsp Baking Powder
  • 1/4 cup Chopped Walnuts or Almonds (30g) (Optional)
  • 1 tbsp Molasses or Treacle (15ml) (This makes it extra dark and rich)
  • Pinch of Salt
  • Cooking spray or butter for greasing the pan

Instructions

  1. Prep: Soak 2 cups of dried fruit in 1/4 cup juice/brandy for 2+ hours. Grease and line a 6-inch cake pan.
  2. Preheat: Set your air fryer to 300°F (150°C).
  3. Mix: Cream 1/2 cup butter and 1/2 cup brown sugar. Mix in 2 eggs. Fold in 1 cup flour, 1 tsp spices, and the soaked fruit.
  4. Cook: Pour into the pan and air fry for 45-55 minutes. Cover with foil halfway through if the top gets too brown.
  5. Finish: Test with a toothpick. Let cool in the pan for 20 minutes before moving to a rack.
